recipes500g/1lb eating apples (eaters keep their shape when cooked)
juice and finely grated zest of one unwaxed lemon
6 heaped tablespoons flour
1 heaped teaspoon of baking powder
pinch of salt
75g/2oz caster sugar
2 large eggs
60g/2oz melted butter
have a 20cm/8ins cake tin, bottom lined, ready
Peel, core and chop the apples and place in a bowl with the lemon juice and zest (to stop them going brown).
Mix the flour, baking powder, salt, sugar, eggs and melted butter, then fold the apples and lemon juice/zest into the mix.
Empty into the cake tin and bake at 180C/350F/Gas mark 4 for 40 minutes or until golden brown.
When cooler, sprinkle with icing sugar...(optional)
Serve WARM with vanilla icecream as a yummy pudding
OR cool on its own as a teatime treat!
PS You can make this cake with any fruit (blueberries are sensational) but as it's apple time of year, we've gone for apples!
